Once upon a time pasta was one of my favourite comfort foods. I’d arrive home from work super late and look in my pantry to find pasta starring back at me. Easy. Tasty. Yum. But so bad. So so bad. Zilch nutrients, tonnes of gluten-ey and cheesy badness.
So I had to find a way to make it clean and this version is a million times better than my old skool pasta. It’s packed full of green veggies and alkaline goodness. And DAAAAAAANG, the pesto is full of flavour!
Pesto chicken and spinach “pasta”
2 large zucchinis
1 large bunch basil
100g pine nuts
2 cloves of garlic, minced
500g chicken breast
2 handfulls of baby spinach
2 table spoons of olive oil
½ teaspoon of salt
Make your “pasta”: Julienne the zucchinis, place in a bowl and then set aside.
