Basil Shrimp Pasta

This dish is easy to make and very good for you!

2 T olive oil
1 T minced garlic
1 lb shrimp, peeled and deveined
2 14oz cans diced tomatoes
1/2 c white wine
1/4 c Italian parsley
3 T fresh chopped basil
2 T olive oil
8oz linguine or angel hair pasta
3 T freshly grated Parmesan cheese (optional)

1. Heat olive oil over medium heat. Cook garlic for one minute. Do not let the garlic burn. Add shrimp and cook for three to five minutes. Set aside.
2. Add tomatoes, wine, parsley and basil to the frying pan. Simmer until liquid is reduced by half, stirring occasionally. Add shrimp to the pan and cook until shrimp is heated.
3. Prepare linguine or angel hair pasta according to the directions on the packaging.
4. Serve shrimp over the pasta and garnish with Parmesan cheese if desired.
