Anyone can eat healthy. Even on a college budget!

A college food staple of many students is pizza; delivered, frozen, you name it, we’ve eaten it. This recipe gives you a healthy version that won’t make you feel like a giant cheese ball after, while still satisfying your craving. Although this recipe is entitled “Pizza Snacks,” it could easily be adapted for a lighter dinner. Pair these easy mini pizzas with some baked, store-bought chips, or with a salad of your choice.

Version 1: Vegetable

Ingredients

  • 2 whole wheat English muffins, sliced
  • 1/4 cup marinara sauce
  • 1/4 cup diced bell pepper
  • 1/4 cup sliced black olives
  • 4-5 fresh basil leaves, roughly chopped
  • 1/2 cup shredded part skim mozzarella cheese

Directions
